ICE CREAM AGEING TANK - made by food grade SS304/SS316, cooled by circulating of chilled water (customized self-cooling available), complete with a slow stirrer and a sloping/ taper bottom.
The mix is then aged for at least four hours and usually overnight.
This allows time for the fat to cool down and crystallize, and for the proteins and polysaccharides to fully hydrate
with constant temperature of +4ºC keeping homogeneous the mass, contents of the tank.
