Introduction:
Zeaxanthin (3,3 '-dihydroxyl -β -carotene), also known as Zeaxanthin, molecular formula C40H56O2, molecular weight 568.85, isoprene, is a kind of oxygen-containing carotenoid (Xanthophyll). It is an isomer with lutein. Most zeaxanthin found in nature are all-trans isomers (AlLE-ISo-Mer).
Zeaxanthin is a new kind of oil-soluble natural pigment, which widely exists in green leafy vegetables, flowers, fruits, Chinese wolfberry and yellow corn. In nature, it often coexists with lutein, β -carotene and cryptoxanthin to form carotenoid mixtures.
