Soy lecithin is rich in PC, PE and PI. It is widely used in foods, feeds, pharmaceutical as emulsifier, stabilizer, mild preservative, moisturizer and emollient. In food industry, it is used in baking foods, chocolate, candy, ice cream, soy milk, soft drinks and so on.
