Glucono delta-lactone(GDL), also known as gluconolactone, is used as a sequestrant, an acidifier, or a curing, pickling, or leavening agent. GDL is widely used as acidulant in meat products, especially for dry cured sausages. It is used when a slow release of acid is required. In the presence of water it reverts to gluconic acid. The lowering of the ph inhibits growth of bacteria and accelerates the drying.
