Polyglycerol esters of fatty acid(PGE) is light brown to light yellow waxy solid. It is not soluble in water but can disperse in water; it is soluble in ethyl alcohol and other organic solvent.

PGE has very good emulsifying, dispersing, humectant, stabilizing and blister functions. The most important usage of PGE is in food processing.
1 Used in fat or protein drinks. PGE can emulsify fat and improve the stability. Prevent fat coming up and protein sinking;
2 Used in ice-cream and other cold products. PGE is the ideal emulsifier and stabilizer for ice-cream. It can make the ice-cream to look smooth, proper wet, with high expansion rate, improve the taste;
3 Used in meat processing: PGE can prevent starch aging, and make the fat disperse evenly;
4 Used in cakes and biscuits. Prevent aging and improve the texture;
5 PGE is used as food coloring agent
