Phycocyanin is a blue pigment extracted from Spirulina and is an edible pigment. Phycocyanin is one of the rare pigment proteins in nature, with bright colors and itself a kind of nutrient-rich protein. The product is blue granules or powder. Soluble in water, insoluble in alcohol and oil.
Phycocyanin can be used for coloring smoothies, milkshakes, yogurt, baked goods, instant powder products, jelly, candy, juice drinks, cheese products, etc. It is a blue colorant.
