1.Water adding device. The installation position can ensure the proper level difference between the quantitative tank and the dough mixer, which can adjust the water intake of different parts in the tank, improve the processing performance, achieve the purpose of uniform water intake, and shorten the mixing time.
2.The paddle adopts a special angle design, so that the flour not only moves in a circle during the mixing process, but also moves along the axial direction. The rotation directions of the two shafts are opposite, pushing the flour forward and backward in different directions. The problem of axial unevenness is eliminated, and the uniformity of mixing is greatly improved.
Flour and water get full effect, expand after absorbing water, stick to each other, flour and water are mixed evenly, the water content of the dough can reach more than 33.5%, and gradually form a fabric with toughness, elasticity, viscosity, extensibility and plasticity. The dough is firmer and chewier.
