Introduction:
Medium-chain triglycerides, or medium-chain fat, naturally exist in palm kernel oil, coconut oil, and other foods, and breast milk,
and are one of the sources of dietary fat. Medium-chain triglycerides are only composed of saturated fatty acids with low freezing
points, liquid at room temperature, and low viscosity. Compared with soybean oil, it is a completely odorless and colorless
transparent liquid. Compared with common oils and hydrogenated oils, the content of medium-chain triglyceride unsaturated fatty
acids is very low and the oxidation stability is very good. MCT is particularly stable at high and low temperatures.
