Solubility: Xanthan gum (11138-66-2) is a polysaccharide polymer with high molecular weight anions generated by the fermentation of starch from Xanthomonas campestris. It is soluble in cold water and hot water and insoluble in general organic solvents.

Application 
1: used as food additive and oil field drilling
2: as emulsifying stabilizer and thickener, it can be used for noodles, pastries, biscuits, shortening, instant coffee, fish products, ice cream, popsicle and ice cream according to Chinese regulations. The maximum dosage is 10g / kg; The maximum dosage in bread, jelly, dairy products, meat products, jam and fancy sauce is 2.0g/kg; The maximum dosage in the beverage is 1.0g/kg.
