Description

Capsanthin is a dark red fat-soluble substance extracted from the fruit of the genus Capsicum. Its molecular formula is C40H56O3. It belongs to lutein and is the main factor for the deep red color of peppers. It is used as a food coloring agent. The components of capsicum extract also include capsaicin, the pungent source, capsanthin, another major colorant, as well as beta-carotene and other carotenoids. Capsanthin is used as a food coloring in cheese, orange juice, spice mixes, seasonings, candies and emulsified processed meats. Also used in poultry feed to darken egg yolk.
