Monosodium Phosphate (MSP)

Chemical formula: NaH₂PO_4.12H2O

Molecular weight: 120.005

Properties: White powder or white crystal, the melting point is 190 centigrade. It is soluble in water showing acidity. It decompounds sodium pyrophosphate anhydrous at 225-250 centigrade, and becomes sodium metaphosphate at 350-400 centigrade. It is slightly hygroscopic.

The use of Monosodium phospahte(MSP):

Monosodium phospahte(MSP) is used as an acidity regulator in brewing, dairy products and other food processing; it is used as a binding agent and stabilizer in meat products, with an amount of about 0.4%. Buffer. Water softener. Production of sodium hexametaphosphate and sodium pyrophosphate. Determination of magnesium. Manufacturing improved white medium in haploid species
