Sodium diacetate, a 1:1 mixture of sodium acetate and acetic acid, is commonly used as a preservative, flavoring agent and pH adjustment in food.
The European food additive number for it is E262(ii).
Other names include: sodium hydrogen diacetate, sodium diacetate anhydrous, sodium hydrogen acetate and sodium acid acetate.
