Description
Alpha-Amylase BAA-0100S is produced from Bacillus subtilis by submerged fermentation, extraction and refining process. It is an endoamylase which can randomly hydrolyze starch, glycogen and its degradation products within the α-1, 4 glycosidic bonds, rapidly decrease the viscosity of the gelatinous starch solution and produce soluble dextrin and oligosaccharides. Excessive hydrolysis may produce a small quantity of glucose and maltose.

BAA-0100S works at pH from 6.0 to 7.0, with its optimal pH from 6.0 to 6.5. BAA-0100S can be inactivated dramatically at pH below 5.0.
Effect of Temperature
BAA-0100S works at temperatures below 60ºC (140ºF), with its optimal temperature ranges from 60 to 70ºC (140 to 158ºF). At temperatures from 70 to 90ºC (158 to 194ºF), the reaction is accelerated with the temperature rises whilst the inactivation also speeds up.
Inhibitors
Copper, titanium and cobalt ions are moderate inhibitors for BAA-0100S, whereas aluminum, lead and zinc ions are strong inhibitors.
