Physical and chemical properties

Phosphatidyl serine, also known as complex nervonic acid, is one of phospholipids. Pure PS is a white waxy solid, soluble in most non-polar solvents containing a small amount of water, insoluble in anhydrous acetone, and can be extracted from histiocyte by chloroform methanol extraction method. When PS is dissolved in water, with the exception of a few forming true solutions, the vast majority of insoluble lipids form micro clusters. At pH 7, PS carries two negative charges and one positive charge, leaving a net negative charge. Hydrolyze with a weak base to generate metal salts of fatty acids, and the remaining portion is not hydrolyzed; Hydrolysis with strong alkali generates fatty acids, serine, and phosphoglycerol. PS is prone to oxidation when exposed to air, gradually darkening in color from white to yellow, and finally becoming black. Natural PS is almost unaffected by alcohol. Saturated PS and alcohol form cross chain gel, while dipalmitoyl phosphatidylserine and 5% alcohol interaction energy to form regular gel at room temperature.

Structure

Phosphatidyl serine is composed of three parts: two long chain fatty acids, a glycerol backbone, and a phospholipid head group. The phospholipid head group is formed by the combination of serine and phosphate, and the phospholipid head group has a negative charge. The phospholipid head group of PS has hydrophilicity, while the tail containing fatty acids has lipophilicity, making PS amphiphilic, both hydrophilic and lipophilic. Additionally, due to the differences in long-chain fatty acids, PS refers to a group of compounds rather than a single component.

Functional effects

Phosphatidyl serine is extracted from natural soybean oil residue. It is an active substance in the cell membrane, especially present in brain cells. Its main function is to improve the function of nerve cells, regulate the transmission of nerve pulses, and enhance brain memory function. Due to its strong lipophilicity, it can quickly enter the brain through the blood-brain barrier after absorption, playing a role in soothing vascular smooth muscle cells and increasing blood supply to the brain.
