Theaflavin pigment is a golden yellow pigment that exists in black tea and is a product of tea fermentation. In biochemistry, thea yellow pigment is a kind of polyphenolic hydroxy group with a phenophenone structure, and it is the first to find a compound with a definite pharmacological effect from tea. The yellow pigment accounts for 0.5% to 2% of the dry tea weight and depends on the method of processing the black tea. Tea yellow pigment plays a certain role in the bright color and strong taste of tea soup, and it is an important quality indicator of black tea.

Function

1. Anti-cancer and anti-cancer effects
Tea has anti-cancer and anti-cancer effects. The main active ingredients are tea polyphenols, catechin monomers and tea pigments.
2. Antioxidant effect
Theaflavins achieve its antioxidant effect by regulating the activity of biological enzymes in the body, directly eliminating free radicals, complexing with metal ions, and preventing the oxidation of low-density lipoproteins.
3. Anti-inflammatory
The occurrence of inflammation is mediated by inflammatory mediators, and the main inflammatory mediator is prostaglandin PG. PG is catalyzed by cyclooxygenase from flower tetraenoic acid.
4. Antibacterial
Toda M et al. confirmed that theaflavins have an inhibitory effect on Staphylococcus aureus. Yam T S and others also confirmed that theaflavins in black tea have good antibacterial properties.
5. Anti-virus
Black tea extract at a concentration of 1mm can inhibit the infection of kidney MDCK cells by influenza virus A and influenza virus B. The mechanism is to inhibit the adsorption of the virus on the cell rather than the replication of the virus in the cell.
6. Anti-cardiovascular disease
The anti-cardiovascular disease of TFs is a relatively new research field nowadays. The mechanism is based on hemorheology.
7. Deodorization
Catechin's ability to inhibit bad breath is greater than sodium chlorophyll, chewing gum containing catechins.

Application

1. Application of theaflavins in the food industry: as a natural antioxidant, tea polyphenols are widely used in the food industry; they are used in various alcoholic beverages.
2. Theaflavins are used in cosmetics and daily necessities as natural additives: they have strong antibacterial function and inhibitory enzyme effect.
