Sodium propionate, molecular formula CH3CH2COONa, relative molecular weight 96.06.
Colorless transparent crystalline or granular crystalline powder with a slight special odor. Monohydrate is a colorless crystal with hygroscopicity. Soluble in water and ethanol, with a solubility of about 100 (15 ºC) in 10% water, and a pH value of 8.5~10.5. It has a wide range of antibacterial effects on fungi, yeast, and bacteria, and is most active in acidic pH. Used as a food preservative, suitable for use as a preservative in pastries and as a mold inhibitor in bread. Sodium propionate is almost non-toxic to the human body. The amount used in food is the same as calcium propionate (calculated by propionic acid). The maximum allowable concentration for use in cosmetics is 2% (calculated as propionic acid). Made from propionic acid as raw material by neutralization with sodium hydroxide.
Used as a masking agent in leather making to improve the alkali resistance and tanning uniformity of the leather.
Food, feed, and preservatives, mold inhibitors. The general addition amount is 0.1-0.3%.
