Potassium sorbate, also known as potassium 2,4-hexadienoate, is the potassium salt of sorbic acid, the molecular formula is C6H7O2K, white to light yellow scale-like crystals, crystal particles or crystal powder, odorless or slightly odorless, long exposure to air is easy to absorb moisture, be oxidation decomposition and discoloration. Easily soluble in water, soluble in propylene glycol and ethanol. It is often used as a preservative. By combining with the sulfhydryl group of microbial enzyme system and thus destroying many enzyme systems, its toxicity is much lower than other preservatives and is widely used. Potassium sorbate can give full play to its preservative effect in acidic medium, and has little preservative effect in neutral conditions.
3.Why potassium sorbate as a food preservative?
3.1 The preservative mechanism of potassium sorbate is the same as that of sorbic acid, that is, it combines with the sulfhydryl group of microbial enzyme system and thus destroys the action of many enzyme systems.
3.2 Potassium sorbate can effectively inhibit the activity of mold, aerobic bacteria and yeast, and also prevent the reproduction of microorganisms such as Staphylococcus, Clostridium and Salmonella, but it is not effective for anaerobic Bacillus and Lactobacillus acidophilus, etc. The inhibition of development is stronger than its bactericidal effect, so as to achieve the purpose of prolonging the preservation time of food, while maintaining the original flavor of food.
3.3 The toxicological evaluation of potassium sorbate belongs to GRAS level, GRAS means generally regarded as safe, which is the test mark of FDA, proving the food safety available. It can be said that potassium sorbate is recognized as a low toxicity, safe as well as efficient food preservative.
4. Application of potassium sorbate in the food industry:
4.1. 1. Animal feed industry.
Potassium sorbate is effective in avoiding spoilage of feeds and remains resistant to microbial growth in the animal intestine. In addition, the neutral taste of potassium sorbate makes it suitable for use in feed because animals are more sensitive than humans to changes in the taste of food. In addition, as an unsaturated fatty acid, potassium sorbate can be considered as a feed ingredient that is easy to digest and has no adverse effects on animals.

The use of potassium sorbate for packaging materials can extend the shelf life of foods such as bread and dry coolers.
