Natamycin - nearly white or cream yellow crystalline powder. It is a kind of odorless, tasteless, low dose and high safety food preservative. Natamycin is a kind of white to milky white odorless and tasteless crystalline powder produced by Streptomyces natamycin controlled fermentation. It usually exists in enol structure. Its mechanism of action is to combine with ergosterol and other sterol groups of fungi to inhibit ergosterol biosynthesis, thus causing cell membrane distortion, eventually leading to leakage and cell death. Natamycin can obviously prolong the shelf life of dough in baked food.
 Natamycin is a kind of natural antifungal compound produced by Streptomyces fermentation. It belongs to polyene macrolide. It can not only inhibit the growth of various molds and yeasts, but also inhibit the production of mycotoxins. It can be widely used in food preservation and antifungal treatment. Natamycin has no inhibitory effect on bacteria, so it does not affect the natural ripening process of yoghurt, cheese, raw ham and dry sausage.
