Sodium citrate is an organic compound with colorless orthorhombic columnar crystal. It is stable in air, soluble in water and glycerol and slightly soluble in ethanol. The aqueous solution is slightly alkaline and cool when tasting. It is commonly used as buffer, complexing agent and bacterial culture medium. It is used in medicine for diuresis, expectorant, sweating, preventing blood coagulation, and in food, beverage, electroplating, photography and so on.

Sodium citrate is used in cold drinks to reduce acidity and improve taste. Adding this product in brewing can promote saccharification, the dosage is about 0.3%. Sodium citrate can be used as emulsifier and stabilizer in the production of sorbitol and ice cream at the dosage of 0.2%~0.3%. It can also be used as an anti-rancidity agent in dairy products, a viscosity enhancer in processed cheese and fish products, and a sweetness corrector in foods.
